Caramel Nut Crispies

This recipe is quick and easy to make. It can be added to children’s lunch boxes or served as a snack while on the go, or as a dessert.

Ingredients

1/4 cup peanut butter
1/2 cup natural brown sugar
1/4 cup fruit sweet
1/4 maple syrup
1/4 teaspoon almond essence
1 tablespoon dessicated coconut
2 tablespoon raw sunflower seeds (rinsed)
1/4 cup chopped mixed nuts or your favorite nuts
2 tablespoons dried cherries
1 cup puffed brown rice
2 cup puffed millet
1/8 cup quick cook oats

Method

Place sugar, fruit sweet, maple syrup and peanut butter in a saucepan over medium-heat. Stir until well heated, and sugar and peanut butter are melted.
Add almond essence and quick oats. Remove from heat. Add rice, millet, sunflower seeds, cherries, chopped nuts and coconut. Mix well together.
Pour and pat mixture into a greased 8 X 8 glass dish or pan.Cool and cut into squares.
