Vegan Recipes for Healthy Weight – Lunch

“Eating like a prince” involves eating a relatively substantial lunch that helps to provide essential nutrients that the body needs. With that in mind here are some wholesome vegan suggestions for lunch.
Lentil Patties
2 c. pureed cooked lentils
2 and 1/2 c. cooked brown rice
1 t. vegetarian chicken-like seasonings
1 onion finely chopped
1 clove garlic, finely chopped
2 T. Bragg Liquid Aminos
1/4 t. ground sage
1/4 t. ground thyme
1/4 t. cumin
1/2 c. finely chopped walnuts
milk alternative (soy, rice, almond)
Method
- Combine all ingredients in a bowl (except milk). Mix well
- Add sufficient milk alternative to mixture until stiff enough to form into patties
- Place patties on sprayed baking sheet
- Place into preheated oven (325 degrees F) and bake for 30 minutes
May be served with baked rice, gravy and mixed salad or green bean casserole
Baked Brown Rice
5 c. Brown rice, washed
8 and 1/2 c water
1 T. vegetarian chicken-like seasonings
1 t onion powder
1 t. garlic powder
2 T. nutritional yeast flakes
Method
- Toast rice in heavy skillet over medium heat. Stirr frequently until golden brown.
- Boil water
- Pour rice into 1 quart casserole dish
- Add water and remaining ingredients to rice. Stir well
- Cover dish and bake for 1 and 1/2 hours at 350 degrees F
Vegetable Medley Pasta
4 c. whole grain pasta (spirals)
1 c. mixed vegetables, steamed
1 c. broccoli florets, steamed
1/2 c. corn kernels, cooked
2 green onions
2 cloves garlic, chopped
1 onion, chopped
1/2 c. red peppers (sweet), chopped
1/2 t. thyme, oregano,and savory
1/2 c. fresh basil or cilantro, chopped
1 T. olive oil
3 c. homemade or organic tomato sauce
Method
- Cook pasta until firm and tender. Drain and place in large serving dish
- Sautė garlic, onion, red pepper, and green onions in oil until tender
- Add remaining vegetables and sauce to saute vegetables. Heat fully
- Pour vegetable mixture over pasta. Serve hot
Zucchini Patties
3 c. zucchini, grated
1 c. onions, chopped
1/2 c. walnuts, ground
1 – 2 c. potato flakes
1 t. garlic powder
1 t. vegetarian chicken-like seasonings
1/8 t. basil, chopped
1/2 t. thyme
1/2 t. sage
Method
- Steam onion in small amount of water
- Mix all ingredients together and form into patties
- Sprinkle with cornflake or bread crumbs
- Bake for 15-20 minutes at 350 degrees F, until golden brown
- Serve with mashed potato and gravy or on a bun with lettuce and tomatoes
Split Pea Soup
8 c. water
2 c. green or yellow split peas
1 onion, chopped
2 cloves, chopped
1 t. celery salt
1 T. Bragg Liquid Aminos
lemon wedges
Method
- Place all ingredient in Crock-Pot. Cook overnight on low or during the day.
- Serve with a squeeze of lemon (this enhances the flavor). May be accompanied by crackers, sandwiches or salad
